Lemon Bars


My friend SW posted a picture of some lemon bars she made the other day on FB.  They looked so yummy thta I had to ask for the recipe.  I am not much of a baker, but they turned out pretty good.  Here is the recipe in case ya'll wanna try it out!

Lemon Bars
Makes 36

Ingredients:
1/2 cup confectioners’ sugar
1 ½ cups all-purpose flour
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, cut in small pieces
Topping
4 large eggs
1 ½ cup granulated sugar
Grated rind of 1 lemon
½ cup fresh lemon juice
3/4 cup whipping cream
confectioners’ sugar for dusting

Directions
Preheat oven to 325 degrees. Grease a 13- x 9- inch baking pan.
Sift the sugar, flour, and salt into a bowl. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs.
Press the mixture into the bottom of the prepared pan. Bake until golden brown, about 20 minutes.
Meanwhile, for the topping, whisk the eggs and sugar together until blended. Add the lemon rind and juice and mix well.
Lightly whip the cream and fold into the egg mixture. Pour over the still warm crust, return to the oven, and bake until set, about 40 minutes.
Cool completely before cutting into bars. Dust with confectioners’ sugar.

I cut the recipe in half and used an 8x8 pan. Turned out good, but I would make a full batch next time (cuz they are yummy) and perhaps use a bit more lemon rind/juice to make it more tart (cuz I like it like that).
